The video posted by Phong Bui is all over social media platforms. Bui shares that both Nihari and ramen are his favourite, so he decided to bring them together into a single dish.
In recent years, there has been a growing fascination with Korean and other international cuisines in Pakistan, with dishes like ramen and hotpot becoming especially popular. The rise of global media, including Korean dramas (K-dramas) and social media influencers, has played a significant role in introducing and popularizing these foreign flavors.

Ingredients:
Nihari Masala:
- 1 Tbsp Cumin
- 1 Tbsp Coriander seeds
- 1 Tbsp Fennel Seeds
- 20 Cloves
- 5 Bay leaves
- 6 star anise
- 1 mace
- 10 Green Cardomon Pods
- 1 Black Cardamom
- 1 Tbsp Black peppercorns
- Cinnamon Flour Mixture:1 Cup of Wheat flour - 1.5 cup Water
Rest of the Ingredients:
- 2+kg Lamb shanks (around 4-6)
- 400g Ghee
- 1 Large Red Onion – Chopped
- 1 Tbsp Minced Ginger
- 1 Tbsp Minced Garlic
- 1 tsp ground nutmeg
- 1.5 tsp Ground Ginger
- 3 tsp Chilli powder
- 1 tsp turmeric Garnish
- Ramen to serve
- Ginger
- Julienne
- Green chillis
- Coriander
Instructions:
Nihari Masala:
1. Use a spice blender to blend all the Nihari Masala ingredients until smooth.
Flour Mixture:
1. In a bowl, whisk together the water and flour until fully combined.
Spices – Nihari Masala
1. In a small bowl, combine your nihari Masala along with 1.5 tsp Ground Ginger, 3 tsp Chilli powder and 1 tsp turmeric
Main Recipe:
1. Heat oil in a large pot over medium-high heat. Add the onions and fry for 5 minutes. Then, add the garlic and ginger, frying for another 5 minutes.
2. Add the meat and 2 tbsp of Nihari Masala, cooking for 10 minutes.
3. Pour in enough water to just cover most of the meat. Cover and cook for 1 hour.
4. Stir in 3 tablespoons of the Nihari Masala and the flour mixture. Reduce heat to medium-low, cover, and cook for 2-3 hours, stirring every 10 minutes.
5. Skim off the oil and transfer it to a separate bowl. (Keep this oil for plating.)
6. Serve the Nihari with ramen, naan, or rice. Garnish with your preferred toppings and drizzle the reserved oil over the curry.
