Welcome back to another great recipe for the week!
Make the most of your leftover rice 🍚 with this straightforward recipe stuffed with Mozzarella 🧀 and served with tangy marinara sauce.
Since I hate sitting idle and my ever-hungry heart keeps pestering me for new goodies, I tumbledown on this recipe in my mother’s cookbook

Ingredients:
2 cups cooked white rice, cooled
1/2 cup grated Parmesan cheese
3 eggs
1/2 cup Mozzarella cheese
1 cup breadcrumbs
Oil, for frying
Marinara sauce
Instructions:
Combine the rice, Parmesan, and 1 egg in a medium bowl and use your hands to thoroughly combine the mixture.
Place a large, deep pot over medium heat and add enough oil to deep fry.
Form each ball by taking a small portion of the mixture, squeezing it firmly, and stuffing some Mozzarella inside each ball. Repeat this process till the whole mixture is consumed.
Whisk together the remaining 2 eggs. Dip each ball in the eggs and then in the breadcrumbs, shaking off any excess.
Once the oil is hot, add 2 or 3 of the breaded balls and fry them until golden brown and cooked inside-out.
Transfer them to a paper towel-lined plate once done. Sprinkle a little salt on each ball.
Serve hot with a side of Marinara sauce.
Yum!
Tips:
- The best type of rice to use would be Basmati.
- Fluff the rice with a fork.
- Make sure you really squeeze the balls together to make them as compact as possible.
- Make sure you don’t over-fry.
