Winters in Pakistan are just around the corner, and we can’t help ourselves indulge in anything comfy and warm. Even though winters have not hit the region as yet, the temperature has been dropping every day, making us want to enjoy a luscious bowl of soup.
A bowl of soup tops the list of comfort foods on our list! It is a delight to enjoy a good soup in bed wrapped in a quilt while binge-watching series on Netflix.
Fun fact: Soups are the only healthiest options on the list of comfort foods!
Soups not just comfort your souls but also fill you up. Yup! that’s right. They are considered as whole meals if paired with some bread or fish crackers.
Below are 3 recipes of soup that you can try this winter:
1 – Seafood Soup
If you enjoy seafood, you will love the seafood soup paired with some garlic bread. The recipe from food52.com calls for dry white wine and sea scallops, but I have removed it as many wouldn’t prefer these ingredients.
Here is the list of ingredients:
- 1/3 cup extra virgin olive oil
- 4 crushed garlic cloves or paste
- 6 tomatoes cut into thin strips
- 1 cup homemade fish stock
- 1 pound fish of choice cut into 2 inches
- 16 large raw shrimp
- 1/2 cup basil leaves
- 1/2 cup chopped parsley
Method of cooking: Heat the oil in a saucepot. Add the crushed garlic and saute on low heat. ( Do not burn the garlic as it will change the taste of the soup drastically!) Next, throw in your tomatoes with some stock and let it simmer. Next, add preferred seafood and simmer for about 5 more minutes and you are done. Season as you like!
2- Mushroom Soup
Try to not use canned mushrooms for this recipe as they do not taste the best! Source your ingredients from a reliable place to get the best results. Following is the recipe.
Here is the list of ingredients:
- 4 tablespoons butter
- 1 tablespoon oil
- 2 onions diced
- 4 cloves garlic
- 750 g mushrooms sliced
- 2 teaspoons thyme
- 6 tablespoons all-purpose flour
- 4 cups low sodium chicken broth
- Salt adjust to taste
- 1/2-1 teaspoons black cracked pepper adjust to taste
- 1 cup heavy cream
- Fresh parsley and thyme to serve
Method of cooking: Heat butter and oil in a large pot. Throw in your onions, cook garlic until fragrant. Next, add mushrooms to the pot and 2 teaspoons thyme, cook for 5 minutes. Sprinkle mushrooms with flour and mix well. Add stock and then mix again. Bring to a boil.
Once all these steps are done – reduce the heat, season your soup and allow it to cook until it thickens. Reduce heat to low, stir in cream. Mix in parsley and remaining thyme. Serve it with crunchy garlic bread.
3 – Chicken Corn Soup Recipe
Chicken corn soup is a classic! The most comforting and simple soup ever, however, you can throw in other ingredients you fancy and make it wholesome.
Here is the list of ingredients:
- 1/2 cup boil shredded chicken
- 4 cups chicken stock
- 2 tablespoons of vinegar
- 2 tablespoons of soya sauce
- 1 tab egg beaten with a pinch of salt
- 1 cup of corn
- salt to taste black pepper
- 1 tablespoon cornflour
Method of cooking: Boil chicken in salt and pepper. Save the stock and shred the chicken. In a pan, add stock and chicken with vinegar and soy sauce. Adjust salt and pepper. Add beaten eggs while stirring. Once everything is combined, add boiled corn. Lower the flame and add cornflour mixed in water. Once your soup has thickened, it is done.
