This traditional snack hails from the Punjab region of Pakistan and India. Made with a basic base of wholemeal flour, it is usually eaten during winter. Here’s all you need to know about the this delicious traditional snack.

What Is Panjeeri?

Panjeeri is a snack full of nutrients and energy. It consists of nuts, dry fruits, gurr and all of your favorite healthy ingredients put together in one divine recipe. Since Panjeeri is considered a warming ,comfort food people love to have it during the winter season to energize and strengthen the body internally.

Benefits Of Panjeeri

Even though Panjeeri is considered as a snack especially to enjoy in winter, it is completely wholesome and a super filling food in itself. There are various health benefits that come with it:

1. Panjeeri is great for postpartum healing. It is great for lactation and instantly increases the flow of breastmilk.
2. It helps get the uterus back to it’s normal position and removes excess fluid in the uterus post delivery.
3. Panjeeri should be eaten right after giving birth since the body loses a lot of calcium and energy. Panjeeri helps a new mother gain her strength.
4. It keeps your body warm and strong.
5. It’s completely safe to eat at any time during the day and makes your bones strong.
6. It helps with postnatal anxiety and depression.
7. Panjeeri generates warmth in the body which heals wounds a mother gets after delivery and increases immunity.

Ingredients For Making Panjeeri

Similar to granola but 10 times healthier consisting of all the rich nutrients. Here are the ingredients you need:

1. 1/2 cup gond/ gond (edible gum crystals)
2. 1 cup Clarified butter/ ghee (for vegan version use coconut oi)l
3. 1/4 cup cashews
4. 1 cup sugar, ground coarsely
5. 2- 1/2 cup coarse wholemeal flour (atta)
6. 1/4 cup pistachios
7. 1/2 cup coarse semolina (sooji)
8. 1/4 cup unsalted almonds
9. 1 tbsp fennel seed powder
10. 1 tbsp cardamom powder

How To Make Panjeeri

1. First of all grind ½ cup of sugar.
2. Then take ½ cup of whole-wheat flour and ½ cup sooji in a non-stick pan or a wok.
3. Now roast on a low flame till the color changes.
4. Here comes the step to add coconut, dry fruits and coconut oil to the flour.
5. Add ghee and stir slowly.
6. Now roast ground almonds separately and add them with coconut mixture and ground cashews.
7. Then cook mixture till you are completely sure that it doesn’t taste raw anymore.
8. Next you have to grind makhan and ghond (separately) to form powders before adding.
9. You’ll see crystals forming but don’t stop stirring.
10. Add ginger and cardamom powder.
11. Roast melon seed and then add to the mixture.
12. Now turn off the flame and add powdered sugar to the panjeeri mixture and then add raisins for more taste.
13. Mix really well.
14. If you want it thick or thin, the consistency depends on your choice.
15. Butter should be added if you want to make it a paste and keep it thick.
16. You may also serve as energy bars. (traditional granola bars)
17. Mix one tablespoon in a glass of milk in the morning and before going to bed.

How To Make Panjeeri More Delicious

Make sure you use a generous amount of ghee because it plays an important role in adding flavor. Less amount of ghee make make the panjeeri too dry and boring. Put the mixture on low flame while making panjeeri so that all the ingredients cook well and bring out their aroma and health properties. Do not over roast the almonds and nuts or else our snack may taste bitter neither over cook edible gum when roasted with nuts or else you’d lose the thick grain consistency.
